拍黄瓜 Chinese Smacked Cucumber

This recipe for ‘smacked cucumber’ (拍黄瓜: pāi huáng guā) is truly delicious. The cucumbers are whacked with the flat of a cleaver. This helps absorb the flavours of chilli, garlic, rice vinegar and sesame oil.
Ingredients
- Marinade
- 2 tbsps. light soy sauce
- 2 tbsps. vinegar
- 2 drops sesame oil
- pinch of salt
- pinch of sugar
- 1 green cucumber
- 3 cloves garlic, crushed
- chili flakes
Preparation
- Chop off the ends of cucumber.
- Lay cucumber on a chopping board. Hold blade of a cleaver flat against cucumber. Give cleaver a whack, so that cucumber bursts. Don’t turn it to mush.
- Slice cucumber and mix well with garlic in a mixing bowl.
- Add marinade and mix well.
- Pepper with chili flakes.
