拍黄瓜 Chinese Smacked Cucumber

This recipe for ‘smacked cucumber’ (拍黄瓜: pāi huáng guā) is truly delicious. The cucumbers are whacked with the flat of a cleaver. This helps absorb the flavours of chilli, garlic, rice vinegar and sesame oil.


  • Marinade
    • 2 tbsps. light soy sauce
    • 2 tbsps. vinegar
    • 2 drops sesame oil
    • pinch of salt
    • pinch of sugar
  • 1 green cucumber
  • 3 cloves garlic, crushed
  • chili flakes


  1. Chop off the ends of cucumber.
  2. Lay cucumber on a chopping board. Hold blade of a cleaver flat against cucumber. Give cleaver a whack, so that cucumber bursts. Don’t turn it to mush.
  3. Slice cucumber and mix well with garlic in a mixing bowl.
  4. Add marinade and mix well.
  5. Pepper with chili flakes.
